What you’re looking for is called ‘personalisation support’, WP e-Commerce does this but only supports a single field.

what I could look at doing is ‘stretching’ that single personalisation field to support more information, encoded or otherwise so that you can add more fields to the Single Product page that is then passed onto Checkout and appears in the Sales log
